Nonpareil is the most widely grown and commercially significant almond variety in California, and the reference point against which all other varieties are evaluated. Its defining industrial characteristics are:
- Blanchability: Nonpareil almonds blanch readily and cleanly. The thin outer shell and smooth kernel surface allow for easy, blemish-free skin removal, producing a high-quality blanched kernel with minimal surface damage.
- Kernel appearance: Light-colored, smooth-surfaced kernel with a uniform shape. This visual consistency is why Nonpareil is used anywhere an attractive appearance or strong almond identification is important.
- Processing versatility: Nonpareil is readily cut for processed forms — sliced, slivered, diced, or ground into flour. Its smooth surface produces clean cuts with minimal crumbling or surface damage.
- Applications: Confectionery coatings, premium snack products, blanched whole almonds, sliced and slivered almonds for bakery and cereal applications, and any product where the almond must be visually recognized. Examples of Nonpareil varieties include Independence and Nonpareil itself.

California-type almonds are defined by blanchability — the ability to have their skin removed cleanly — and are used primarily as input material for manufactured products. This classification encompasses a wide range of varieties with diverse shell hardness, kernel shapes, skin colors, and surface characteristics, making them adaptable to nearly any processing application.
- Blanchability: Blanchable, though typically with slightly more variation in skin removal quality than Nonpareil. Well suited for slicing, slivering, dicing, and flour production.
- Shell hardness: Ranges from soft-shell (Carmel) to semi-hard (Fritz), giving processors flexibility in shelling efficiency and yield.
- Applications: Blanching and further processing for manufactured ingredients; sliced and slivered almonds; almond flour and almond butter production; confectionery and bakery applications where visual uniformity is less critical than processing yield. Key varieties include Aldrich, Carmel, and Monterey.
Carmel, for example, has a soft shell with good shell integrity and a medium, narrow kernel shape with slightly wrinkled surface. Fritz is classified as both California-type and Mission-type, with a semi-hard shell and low suture opening, making it suitable for applications requiring salt and flavor adherence as well as blanching.

Mission-type: for roasting, candy, and flavor applications
Mission-type almonds have hard shells and kernels that are small, wide, and often plump. The kernel skin is generally darker than Nonpareil and distinctly wrinkled. This wrinkled surface texture is a functional characteristic: it enhances salt and flavor adherence, making Mission-type almonds particularly well suited for heavily seasoned or coated snack applications.
- Blanchability: Blanching is less common for Mission-type almonds. The darker, more complex skin does not remove as cleanly as Nonpareil or California-type varieties.
- Flavor adherence: The wrinkled surface texture and skin characteristics allow flavoring agents, salt, chocolate coatings, and candy coatings to adhere more uniformly and in higher quantities per unit weight.
- Applications: Dry-roasted and oil-roasted snacks, candy-coated almonds (Jordan almonds and similar), chocolate-coated confections, and applications where the skin’s visual texture is a product feature rather than a drawback. Key varieties include Butte, Fritz, and Padre.
Note that Fritz appears in both California-type and Mission-type classifications, as it shares blanchability with California-type varieties while also having the harder shell and flavor-adherence characteristics of Mission-type. This dual classification is increasingly common as newer varieties are developed.

USDA grades for shelled almonds are voluntary minimum standards — they establish tolerances for quality factors but do not cap how stringently a supplier can perform above them. The California almond industry routinely supplies products that meet specifications exceeding USDA grade standards, but the grade system provides a common reference language for buyer-supplier specification discussions. As the Almond Board of California notes, the higher the percentage listed for a given grade factor, the higher the tolerance for that factor — meaning more of that defect type is permitted at that grade level.
There are five primary shelled almond grades, each defined by its allowable tolerances for dissimilar almonds, doubles, chips and scratch, foreign material, particles and dust, split and broken kernels, other defects, and serious defects.

- Dissimilar: Different almond varieties mixed in one lot. Relevant for whole almond applications where visual variety uniformity is required.
- Doubles: Two kernels developing in one shell; one side of a double kernel is flat or concave. Relevant for applications where kernel shape consistency is important.
- Chips and scratch: Loss of kernel skin from mechanical processing. Greater than 1/8″ (3.2mm) in diameter is defined as injury; greater than 1/4″ (6.4mm) in aggregate is a defect. Critical for premium snack and confectionery applications.
- Foreign material: Pieces of shell, hulls, or other foreign matter that do not pass through a round-opening screen of 8/64″ (3.2mm) diameter. A food safety and quality parameter for all applications.
- Particles and dust: Fragments of almond kernels or other material that pass through a round-opening screen of 8/64″ (3.2mm) diameter. Relevant for product cleanliness and yield.
- Split and broken: Seven-eighths or less of complete whole kernels that do not pass through a round-opening screen of 8/64″ (3.2mm) diameter. The primary driver of grade differentiation between SSR and Standard grades.
- Other defects: Any defect that materially detracts from the appearance of the kernel or the edible or shipping quality — includes gum, shrivel, brown spot, and discoloration.
- Serious defects: Any defect that makes a kernel unsuitable for consumption — includes decay, rancidity, insect injury, and mold damage. Tolerances vary by grade: up to 1% is permitted in U.S. Fancy, 1.5% in U.S. Extra No. 1 and U.S. No. 1, and 2% in U.S. Select Sheller Run and U.S. Standard Sheller Run. For industrial food manufacturing, buyers typically specify serious damage tolerances at the lower end of the applicable grade range, and suppliers operating above USDA minimum standards will often hold to tighter thresholds.

- A Mission-type kernel (Butte, Padre) at U.S. No. 1 grade is well suited for roasted flavored snack applications, where the darker skin and wrinkled surface are product features and the grade’s tolerances are appropriate for the visual quality expected in that segment.
- For blanched sliced almonds, California-type varieties at SSR grade are often the most efficient specification: the California-type’s blanchability removes surface defects during the blanching process, and the SSR grade’s higher tolerance for chips and scratch is irrelevant once the skin is removed and the kernel is sliced.
- For premium whole almonds in high-visibility retail applications, Nonpareil at U.S. Fancy or U.S. Extra No. 1 grade is the standard specification, combining the variety’s visual excellence with the grade’s strictest defect tolerances.
The practical implication is that procurement teams should specify both variety and grade simultaneously, and should evaluate whether the grade tolerance for a given defect category matters for the specific application. Paying for a higher grade than the application requires adds unnecessary cost; specifying a grade too low for a visible-application product creates finished-goods quality risk.
